You’ll need really ripe plums for this so they give up their juices – woolly ones just won’t work, which is why it’s best to wait until they are in season

Ingredients

  • 6 really ripe red plums, stoned and quartered
  • 4 tbsp demerara sugar
  • 100ml orange juice
  • 1 tsp cinnamon

CRUMBLE TOPPING

  • 150g plain flour
  • 75g butter
  • 2 tbsp demerara sugar
  • 4 tbsp oats
  • 50g flaked almonds

Method

  • STEP 1

    Heat the oven to 180c/fan 160c/gas 4. Put the plums, sugar, orange juice and cinnamon in a pan. Stir and heat for 3-4 minutes until the sugar has dissolved. Divide between 4 small ovenproof dishes.

  • STEP 2

    Whizz the flour and butter in a food processor until it resembles breadcrumbs then mix in the sugar, oats and almonds. Spoon over the top of the plums and bake for 20-25 minutes until golden and crisp.
