Ingredients
- figs 6, quartered
- sherry vinegar 2 tbsp
- Dijon mustard ½ tsp
- olive oil 3 tbsp
- runny honey 1 tsp
- rocket 50g
- mozzarella 1 ball, torn into pieces
- serrano ham 6 slices
- basil a small handful of leaves
Method

Step 1
Put the figs cut-side up on a plate. Whisk the vinegar and mustard, then gradually whisk in the olive oil and honey. Season, then spoon over the figs and leave at room temperature for 20 minutes.

Step 2
Divide the rocket, mozzarella and ham between 2 plates. Spoon over the figs and dressing, then finish with a few basil leaves.
