  • 100g caster sugar
  • 50ml red wine vinegar
  • 2 star anise
  • 500g strawberries
    hulled
  • 300ml double cream
  • 1 tbsp icing sugar
  • ½ tsp vanilla extract
  • a handful mint leaves

Method

  • step 1

    Heat the oven to 200C/fan 180C/gas 6. Put the sugar, vinegar, star anise and 50ml of water into a small pan and heat until the sugar dissolves. Bubble the mixture until syrupy.

  • step 2

    Put the strawberries into a deep roasting tin and pour over the syrup. Roast for 10 minutes, toss, then roast for another 5 minutes, or until the strawberries have softened slightly and the syrup has reduced to a glaze. Leave to cool until just warm.

  • step 3

    Put the cream, sugar and vanilla into a bowl and whisk to soft peaks.

  • step 4

    Divide the strawberries between bowls, serve with the cream and tear over the mint leaves.
