How to make the perfect fruit salad: cook's tips

  • Use any seasonal fruit in this salad – oranges, melon, grapes, plums, peaches and raspberries all work well.
  • Add a crunchy topping, if you like – you can combine toasted desiccated coconut, toasted mixed seeds, granola or toasted nuts.

How to store fruit salad: Keeps for up to 3 days in an airtight container in the fridge.

Can it be made in advance? Make up to a day in advance and store in the fridge. Bring up to room temperature to serve.

  • 75g light brown soft sugar
  • small bunch of mint
    leaves picked and roughly chopped
  • ½ lime
    juiced
  • 1 ripe pineapple
    peeled and cut into thin slices
  • 2 firm kiwis
    peeled and cut into wedges
  • 150g blueberries
  • 250g strawberries
    hulled, trimmed and quartered

Method

  • step 1

    Pour the sugar and 40ml of water into a small saucepan. Bring to a simmer and swirl until the sugar has dissolved and the mixture has become syrupy, about 3-4 mins. Stir in the mint leaves and lime juice, then set aside.

  • step 2

    Combine the pineapple, kiwi, blueberries and strawberries in a large bowl. Drizzle over the dressing, stir to combine, then tip onto a platter and serve.
