  • 4 very ripe bananas
    mashed
  • 125g plain flour
  • 100g crunchy peanut butter
  • 100g soft brown sugar
  • 75g wholemeal flour
  • 50g butter
    softened
  • 2 eggs
  • 2 tsp baking powder

Frosting

  • 200g icing sugar
  • 75g smooth peanut butter
  • 75g soft cheese
  • 75g butter
  • 1 tbsp toasted chopped peanuts
    to finish (optional)

Method

  • step 1

    Heat the oven to 180C/fan 160C/gas 4. Put the butter, crunchy peanut butter, sugar, flours, baking powder, eggs and bananas in a bowl and beat together with an electric beater.

    Spoon into a lined and buttered 450g loaf tin. Bake for 1¼-1½ hours, or until a skewer comes out clean. Cool for 10 minutes in the tin then lift out and cool completely on a rack.

  • step 3

    To make the frosting, beat the butter until soft, then beat in the soft cheese and peanut butter followed by the icing sugar. Frost the loaf and scatter over the peanuts, if you like.
