What is black pudding?

Black pudding is a type of blood sausage made from pork or beef blood, with pork fat or beef suet, and a cereal, usually oatmeal. The addition of cereal distinguishes it from other types of blood sausage eaten around the world. Originating in the United Kingdom or Ireland, it’s considered one of the oldest forms of sausage. Black pudding can be grilled, fried, baked or boiled in its skin, and is most commonly served as part of a traditional full breakfast.
