Plain sweet lassi

Lassi is the milkshake of the Indian subcontinent. Creamily nourishing, it’s also thirst-quenching. Typically a choice of sweet or salted plain lassi is offered.

  • plain yogurt 500ml
  • raw milk, organic milk or water 100ml, ice cold
  • rapadura sugar or dark brown soft sugar 2-3 tbsp
  • ground cardamom a pinch
  • pistachios or almonds finely chopped, to serve


  • Step 1

    Put the yogurt, water or milk, sugar and cardamom in a blender and blitz for 1 minute. Add a couple of ice cubes and process for another minute. Serve with a sprinkling of pistachios or almonds.
