Plain sweet lassi

Lassi is the milkshake of the Indian subcontinent. Creamily nourishing, it’s also thirst-quenching. Typically a choice of sweet or salted plain lassi is offered.

Ingredients

  • 500ml plain yogurt
  • 100ml raw milk, organic milk or water, ice cold
  • 2-3 tbsp rapadura sugar or dark brown soft sugar
  • a pinch ground cardamom
  • finely chopped pistachios or almonds, to serve

Method

  • STEP 1

    Put the yogurt, water or milk, sugar and cardamom in a blender and blitz for 1 minute. Add a couple of ice cubes and process for another minute. Serve with a sprinkling of pistachios or almonds.
