Try this recipe for Tex-mex baked potato, then check out our healthy jacket potato, masala beans baked potato, tuna baked potato and more jacket potato fillings.

Ingredients

  • 2 baked potatoes
  • 50g cheddar, grated
  • 50g mozzarella
  • 8, diced baby plum tomatoes
  • chopped to make 1 tbsp jalapeños
  • 1/2 avocado, diced
  • 1/2 red onion, finely chopped
  • chopped to make 1 tbsp coriander
  • 1 lime

Method

  • STEP 1

    For a perfect jacket, prick all over, rub with olive oil and bake in a 200C/fan 180C/gas 6 oven for 1-1¼ hours.

  • STEP 2

    Divide the grated cheddar and mozzarella between 2 split baked spuds then put back in the oven until melted.

  • STEP 3

    Meanwhile, mix the baby plum tomatoes, jalapeños, diced avocado, red onion and coriander with a squeeze of lime juice and season.

  • STEP 4

    Pile on top of the melted cheese.
