Tex-mex melt baked potato

Ingredients
- 2 baked potatoes
- 50g cheddar, grated
- 50g mozzarella
- 8, diced baby plum tomatoes
- chopped to make 1 tbsp jalapeños
- 1/2 avocado, diced
- 1/2 red onion, finely chopped
- chopped to make 1 tbsp coriander
- 1 lime
Method
- STEP 1
For a perfect jacket, prick all over, rub with olive oil and bake in a 200C/fan 180C/gas 6 oven for 1-1¼ hours.
- STEP 2
Divide the grated cheddar and mozzarella between 2 split baked spuds then put back in the oven until melted.
- STEP 3
Meanwhile, mix the baby plum tomatoes, jalapeños, diced avocado, red onion and coriander with a squeeze of lime juice and season.
- STEP 4
Pile on top of the melted cheese.
