Mushrooms stuffed with cheese

This recipe transforms Welsh rarebit into a moreish side dish. Large field mushrooms are stuffed with cheddar cheese with a kick of mustard and Worcestershire sauce.

  • large field mushrooms 4
  • olive oil
  • mature cheddar 170g, grated
  • grain mustard 1 tsp
  • 2 tbsp
  • Worcestershire sauce dash
  • egg 1 yolk


  • Step 1

    Lightly brush the tops of the mushrooms with olive oil then put on a baking tray.

  • Step 2

    Combine the cheese, mustard, beer, worcestershire sauce and egg in a bowl.

    Spoon the mixture into the mushrooms and bake at around 180c/fan 160c/gas 4 until the cheese mix is cooked through and golden brown. Serve on mixed leaves.
