Try making your own pesto for this courgetti dish with our homemade pesto recipe.


  • oil
  • 1 clove garlic, peeled
  • 500g courgette spaghetti
  • 4 tbsp fresh pesto
  • 125g mozzarella pearls, drained
  • 140g sundried tomatoes, drained
  • to serve basil


  • STEP 1

    Heat 1 tbsp oil and the garlic clove in a frying pan until hot, then fry two packs of Tesco courgette spaghetti (£1/250g) for a few minutes until warm and just starting to wilt. Tip into a large bowl and season well, removing the garlic.

  • STEP 2

    Toss with 4 tbsp Tesco Finest Pesto and Fresh Basil (£2.50/130g), the Tesco Mini Mozzarella Pearls (£1/125g) and drained Tesco Sundried Tomatoes (£1.50/140g). Drizzle with more olive oil and scatter with torn Tesco Basil (70p/31g) to serve.
