Purple sprouting broccoli and fried eggs on toast

Ingredients
- 200g purple sprouting broccoli, trimmed
- spray oil
- 2 medium eggs
- 50g unsalted butter
- 1⁄2 tsp cumin seeds
- a pinch dried chilli flakes
- 100g low-fat natural yogurt
- 2 slices sourdough, toasted
- 1 lime, wedged
Method
- STEP 1
Blanch the broccoli for 2 minutes in a large pan of boiling water, then drain well.
- STEP 2
Spray a little oil into a non-stick frying pan over a medium-high heat, then crack in the eggs. Cook for a minute or until crisping at the edges, then add the butter, cumin seeds and chilli, and spoon the butter over the eggs until fully cooked.
- STEP 3
Spread the yogurt onto the sourdough, season and squeeze over some lime juice. Divide the broccoli between the toasts, lift on the eggs and spoon over the spiced butter. Squeeze over more lime juice, to serve.
