  • purple sprouting broccoli 200g, trimmed
  • spray oil
  • eggs 2 medium
  • unsalted butter 50g
  • cumin seeds 1⁄2 tsp
  • dried chilli flakes a pinch
  • low-fat natural yogurt 100g
  • sourdough 2 slices, toasted
  • lime 1, wedged


  • Step 1

    Blanch the broccoli for 2 minutes in a large pan of boiling water, then drain well.

  • Step 2

    Spray a little oil into a non-stick frying pan over a medium-high heat, then crack in the eggs. Cook for a minute or until crisping at the edges, then add the butter, cumin seeds and chilli, and spoon the butter over the eggs until fully cooked.

  • Step 3

    Spread the yogurt onto the sourdough, season and squeeze over some lime juice. Divide the broccoli between the toasts, lift on the eggs and spoon over the spiced butter. Squeeze over more lime juice, to serve.
