  • 400g purple sprouting broccoli
    halved lengthways
  • 2 tbsp vegetable oil
  • 2 cloves garlic
    crushed
  • 1 red chilli
    deseeded and finely chopped
  • 2 tbsp oyster sauce
  • 1½ tbsp light soy sauce
  • ½ tsp caster sugar
  • cooked rice
    to serve

Method

  • step 1

    Cook the sprouting broccoli in a pan of lightly salted boiling water for 2 minutes, then drain well.

  • step 2

    Heat the oil in a large frying pan or wok, add the garlic and most of the chilli, and cook for 1 minute. Add the broccoli and cook for another 2-3 minutes, before adding the oyster sauce, soy sauce and sugar with 50ml of water. Toss and cook until the sauce reduces and starts to coat the broccoli. Tip onto a serving dish and sprinkle with a little more chilli, if you like. Serve with rice.

Purple sprouting broccoli – from the brassica family – has long, sometimes thick, stems with bright purple florets that have all the broccoli flavour but greater bite and texture.
