Purple sprouting broccoli is matched with a moreish sweet and salty oyster sauce. Serve with rice for a quick midweek dinner

  • purple sprouting broccoli 400g, halved lengthways
  • vegetable oil 2 tbsp
  • garlic 2 cloves, crushed
  • red chilli 1, deseeded and finely chopped
  • oyster sauce 2 tbsp
  • light soy sauce 1½ tbsp
  • caster sugar ½ tsp
  • cooked rice to serve


  • Step 1

    Cook the sprouting broccoli in a pan of lightly salted boiling water for 2 minutes, then drain well.

  • Step 2

    Heat the oil in a large frying pan or wok, add the garlic and most of the chilli, and cook for 1 minute. Add the broccoli and cook for another 2-3 minutes, before adding the oyster sauce, soy sauce and sugar with 50ml of water. Toss and cook until the sauce reduces and starts to coat the broccoli. Tip onto a serving dish and sprinkle with a little more chilli, if you like. Serve with rice.
