Try this recipe for spiced paneer skewers, then check out our chilli paneer.

Ingredients

  • 1 tbsp groundnut oil
  • a small chunk ginger, finely grated
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 220g paneer, cut into cubes
  • 1 green pepper, cut into chunks
  • 1 small mango, diced
  • 1 red chilli, finely chopped
  • a handful of leaves mint, plus a few leaves
  • ½ lime, plus wedges to serve
  • 2 small naans, warmed to serve
  • to serve natural yogurt

Method

  • STEP 1

    Mix the oil, ginger and spices in a bowl. Add the paneer and pepper and toss, then leave for 10 minutes. In a separate bowl, toss the mango, most of the chilli and the chopped mint with a squeeze of lime and season.

  • STEP 2

    Heat the grill to high. Skewer the paneer and pepper then grill for 6-8 minutes, turning until the paneer is golden. Scatter with more chilli and the mint leaves. Serve with the salsa, warm naans, yogurt and lime wedges.
