  • 2 tbsp olive oil
  • 2 cloves garlic
    thinly sliced
  • 1 tsp chilli flakes
  • 400g tin chopped tomatoes
  • 1 tsp (any kind will do) sugar
  • 150g spaghetti
  • a handful flat-leaf parsley
    chopped

Method

  • step 1

    Heat the olive oil in a pan and cook the garlic gently for a few minutes. Add the chilli flakes and cook for a minute more, then tip in the tomatoes and sugar. Simmer for 20 minutes until thickened.

  • step 2

    Cook the spaghetti, then drain and toss with the sauce. Sprinkle over the parsley to finish.
