Spaghetti arrabiata

This spicy tomato pasta dish calls for only the simplest of ingredients. Ready in 25 minutes, it's the perfect meat-free midweek dinner

  • olive oil 2 tbsp
  • garlic 2 cloves, thinly sliced
  • chilli flakes 1 tsp
  • chopped tomatoes 400g tin
  • sugar 1 tsp (any kind will do)
  • spaghetti 150g
  • flat-leaf parsley a handful, chopped


  • Step 1

    Heat the olive oil in a pan and cook the garlic gently for a few minutes. Add the chilli flakes and cook for a minute more, then tip in the tomatoes and sugar. Simmer for 20 minutes until thickened.

  • Step 2

    Cook the spaghetti, then drain and toss with the sauce. Sprinkle over the parsley to finish.
