  • 1 large  cauliflower
  • 25g butter
  • vegetable oil
  • 100g mature cheddar
    grated
  • 1 tsp wholegrain or dijon mustard
  • 1 small egg yolk
  • a couple of good dashes (optional) Worcestershire sauce
  • 1-2 tbsp dark ale or beer
  • 4 spring onions
    chopped including green bits

Method

  • step 1

    Heat the oven to 200C/fan 180C/gas 6. Cut the cauliflower in half then cut a thick slice from each half to make 2 steaks. Melt the butter in a large frying pan and add 1 tbsp of oil. Season the cauliflower steaks then fry on each side until golden.

  • step 2

    Lift the steaks onto a baking tray and roast in the oven for 10 minutes or until tender when pierced with a knife. Once cooked, remove the steaks and turn the oven to medium grill.

  • step 3

    Put the cheese, mustard, egg yolk and Worcestershire sauce in a bowl and mash together, adding enough ale to make a paste. Stir in the spring onions and season.

  • step 4

    Spoon the cheese mix over the cauli steaks and put under the grill for 4-5 minutes or until golden and bubbling.
