Pea soup with poached egg and chive oil

Liven up your pea soup with a softly set poached egg topping and a drizzle of chive oil. This combination works really well and you can sprinkle some extra chives to serve



  • eggs 2, small
  • chives a bunch, plus more to serve
  • oil 100ml
  • pea soup 1 tin/tub


  • Step 1

    Heat a small pan of water until just simmering. Drop in the eggs and poach until softly set.

  • Step 2

    Meanwhile, pour boiling water over a small bunch of chives. Leave for 3 minutes, then drain and whizz in a small blender with the oil. Strain through a fine sieve and keep in the fridge.

  • Step 3

    Drop an egg into a bowl of hot pea soup, drizzle over some chive oil and finish with a few more chopped chives.
