Quiet night in tonight? Treat yourself to this easy, healthy couscous dish with tagine style flavours



  • Moroccan couscous 2 cups, cooked
  • roasted red pepper (from a jar) 1, sliced
  • dried apricots 4, chopped
  • parsley large bunch, chopped
  • flaked almonds to serve, toasted
  • butter melted
  • harissa to serve 


  • Step 1

    Toss cooked couscous with  roasted red pepper, chopped dried apricots and a large bunch of chopped parsley.Sprinkle toasted flaked almonds over the top and drizzle with a little melted butter mixed with harissa. Serve with houmous and flatbread.
