• 2 heads butterhead lettuce, washed and separated
  • 1 shallot, finely diced
  • 1 celery stick, peeled into ribbons
  • 1 long green pepper, sliced
  • 1 tbsp full fat yogurt
  • 1 tsp sesame oil
  • 1 lemon, zested and juiced
  • 1 tbsp honey
  • olive oil, for drizzling
  • 1 tbsp store-bought crunchy fried onions


  • STEP 1

    Arrange the lettuce leaves in a serving bowl. Add the shallots, celery and pepper.

  • STEP 2

    Put the yogurt, sesame oil, lemon zest and juice, and honey in a jug, and whisk well. Pour the dressing over the lettuce leaves and toss lightly. Drizzle with the olive oil, sprinkle over the crunchy onions and serve.
