Ingredients
- whole cooked lobster or lobster meat 1, cracked and picked - or about 150g lobster meat, (we used a Big & juicy frozen lobster from Ocado)
- light mayonnaise 125g
- lemon juice 2 tbsp
- chives a small bunch, snipped
- celery 1 large stick, finely diced
- cayenne a few pinches
- butter 1 tbsp, melted
- mini rolls 10

Step 1
Mix the mayonnaise, lemon juice, most of the snipped chives, diced celery and three pinches of cayenne. Season with white pepper and a little salt, then gently fold through the lobster meat and keep chilled.

Step 2
Just before serving, cut a slit in the top of the the rolls. Brush some of the butter on the insides, and gently warm in a low oven (160C/fan 140C/gas 3). Spoon the filling between the rolls.Add a pinch or two more cayenne and the rest of the chives.
