
Tomato and feta salad

Ingredients
- 3 tbsp olive oil
- 2 tbsp sherry vinegar
- 1 tsp caster sugar
- ½ red onion, thinly sliced
- 6 vine tomatoes, thinly sliced
- 100g feta, crumbled
- 10 kalamata olives, pitted
- a few leaves mint, torn
- 2 pitta breads, warmed
Method
- STEP 1
Whisk the olive oil, vinegar and sugar together. Stir in the onion, and season. Put the tomatoes on 2 plates then divide the dressing and onion between them. Leave to sit for 10 minutes then top with the feta, olives and mint. Serve with warm pittas.
