This recipe for marinated tomato and feta salad makes a quick and easy vegetarian meal for two midweek. It also makes a tasty lunch to take to work

Ingredients

  • olive oil 3 tbsp
  • sherry vinegar 2 tbsp
  • caster sugar 1 tsp
  • red onion ½, thinly sliced
  • vine tomatoes 6, thinly sliced
  • feta 100g, crumbled
  • kalamata olives 10, pitted
  • mint a few leaves, torn
  • pitta breads 2, warmed

Method

  • Step 1

    Whisk the olive oil, vinegar and sugar together. Stir in the onion, and season. Put the tomatoes on 2 plates then divide the dressing and onion between them. Leave to sit for 10 minutes then top with the feta, olives and mint. Serve with warm pittas.
