Guinness rarebit

A clever Irish twist on a favourite snack to serve on St Patrick’s Day. Classic rarebit often contains a splash of ale – using Guinness gives a deeper savoury flavour to the finished dish.

Ingredients

  • butter 50g
  • plain flour 1 tbsp
  • milk 50ml
  • Guinness 50ml
  • mature cheddar 200g
  • English mustard 1 tsp
  • Worcestershire sauce
  • 4 large slices, toasted

Method

  • Step 1

    Melt the butter in a small pan, stir in the flour and cook for a couple of minutes. Gradually mix in the milk, then slowly add the Guinness until you have a thick sauce. Bubble for a couple of minutes then add in the cheese and stir until melted. 

  • Step 2

    Mix in the mustard with a couple of splashes of Worcestershire sauce and season. Spread the mix over the bread then grill until golden and bubbling. Goes well with the rest of the Guinness!
