This gin and lime cocktail uses sugar syrup, which you can buy ready made, but it's much cheaper and easier to make your own. Make up a big jugful to serve a crowd for your next party.

6 tbsp golden caster sugar

300ml gin

4 limes
1 cut into wedges

Put the caster sugar in a pan with 6 tbsp water. Simmer gently until all the sugar has dissolved then simmer for 2 minutes and cool.

Mix together the gin and lime juice and 3 tbsp of the sugar syrup. Divide between 6 old fashioned glasses filled with ice. Top with a splash of soda and a wedge of lime.
