  • 5 spring onions
    finely sliced, plus a little extra to serve
  • finely grated to make 1 tbsp 
ginger
  • 1 tbsp groundnut oil
    plus 1 tsp for the steak
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 2 tsp sherry vinegar
  • ¼ tsp ground white pepper
  • 250g sirloin steak
    fat trimmed and discarded
  • 300g pack cooked egg noodles

Method

  • step 1

    Mix the spring onions, ginger, oils, soy, vinegar and white pepper, and add a big pinch of salt. Stir in 2 tbsp water and leave to sit for 10 minutes.

  • step 2

    Cut the steak across the grain into very thin slices. Season and toss with 1 tsp of oil.

  • step 3

    Heat a non-stick pan or wok until hot then cook the steak for 3 minutes until seared on the outside. Tip in the noodles and sauce, and toss everything until heated through. Serve straightaway with a sprinkling of sliced spring onions.
