Stir-fried chicken with cashew and coriander rice

Stir-fries are a great option for quick and easy meals midweek. The cashews add a great crunch to this recipe while the honey gives it sweetness. You could serve with normal rice, but the coriander works really well.



  • cashew nuts 50g
  • chicken breasts 3, sliced into thin strips
  • honey 3 tbsp
  • soy sauce 3 tbsp
  • spring onions 4, sliced diagonally
  • red pepper 1, cut into small chunks
  • lime 1, juiced
  • Tilda Rizazz basmati rice 1 pack
  • coriander a small handful of leaves


  • Step 1

    Toast the cashews in a frying pan until lightly golden.

  • Step 2

    Stir-fry the chicken in a non-stick pan or wok with the honey and soy sauce for 5-6 minutes. Add the spring onion and red pepper and cook for a couple more minutes, then add the lime juice.

  • Step 3

    Meanwhile, microwave the rice according to packet instructions, stir through the cashew nuts and coriander and serve with the chicken.
