Ingredients
- lean sirloin steak 300g, fat trimmed
- olive oil
- lime 1, zested
- buttermilk 100ml
- cider vinegar 1 tsp
- chives chopped to make 1 tbsp
- romaine lettuce 1, leaves torn
- radishes 1 bunch, sliced
Method

Step 1
Heat a griddle pan to very hot. Rub the steaks with a little oil and cook for two minutes on each side for medium. Season and rest while you make the salad.

Step 2
Whisk the lime zest, buttermilk, vinegar, chives and season.

Step 3
Toss the lettuce and radishes and divide between two plates. Slice the steak and add to the salad, serve with the dressing.
