Oven Fried Chicken Recipe with Slaw

Oven ‘fried’ chicken and purple slaw

Coated in crispy breadcrumbs and served with a fresh and crunchy slaw, this is our healthy version of a KFC takeaway

Ingredients

  • dried breadcrumbs 75g
  • hot smoked paprika 2 tsp
  • ground turmeric ½ tsp
  • garlic salt 1 tsp
  • celery salt ½ tsp
  • dried oregano 1 tsp
  • plain flour 2 tbsp, well seasoned
  • egg 1 large, beaten
  • skinless chicken thigh fillets 4 large, halved and excess fat removed
  • oven french fries to serve
  • hot sauce to serve

PURPLE SLAW

  • red onion ½, thinly sliced
  • red cabbage ¼, finely shredded
  • carrots 2, shredded
  • white wine vinegar 1 tbsp
  • mayonnaise 2 tbsp

Method

  • Step 1

    To make the slaw, toss all the veg with the vinegar and lots of seasoning.

  • Step 2

    Toss the breadcrumbs with the paprika, turmeric, garlic salt, celery salt and oregano in a shallow bowl. Put the flour and egg in 2 separate bowls.

  • Step 3

    Dust the chicken in the flour, then the egg and then the spiced breadcrumbs. Put on a rack over a baking tray.

  • Step 4

    Heat the oven to 200C/fan 180C/gas 6. Bake the chicken for 35-40 minutes or until crisp, golden and cooked through. Toss the mayo with the slaw and serve with the chicken, oven fries and hot sauce.
