Ingredients
- dried breadcrumbs 75g
- hot smoked paprika 2 tsp
- ground turmeric ½ tsp
- garlic salt 1 tsp
- celery salt ½ tsp
- dried oregano 1 tsp
- plain flour 2 tbsp, well seasoned
- egg 1 large, beaten
- skinless chicken thigh fillets 4 large, halved and excess fat removed
- oven french fries to serve
- hot sauce to serve
PURPLE SLAW
- red onion ½, thinly sliced
- red cabbage ¼, finely shredded
- carrots 2, shredded
- white wine vinegar 1 tbsp
- mayonnaise 2 tbsp
Method

Step 1
To make the slaw, toss all the veg with the vinegar and lots of seasoning.

Toss the breadcrumbs with the paprika, turmeric, garlic salt, celery salt and oregano in a shallow bowl. Put the flour and egg in 2 separate bowls.

Step 3
Dust the chicken in the flour, then the egg and then the spiced breadcrumbs. Put on a rack over a baking tray.

Step 4
Heat the oven to 200C/fan 180C/gas 6. Bake the chicken for 35-40 minutes or until crisp, golden and cooked through. Toss the mayo with the slaw and serve with the chicken, oven fries and hot sauce.
