Hunter’s chicken

Ingredients
- 2 chicken breasts
- 6 streaky bacon rashers
- 100ml BBQ sauce
- 30g grated mozzarella
- 30g grated mature cheddar
- mashed potato and steamed greens to serve
Method
- STEP 1
Heat the oven to 200C/fan 180C/gas 6. Put the chicken breasts on a board and season lightly. Cut the bacon rashers in half lengthways and wrap these around the chicken breasts, overlapping them. Put on a baking tray and roast for 25 minutes until the chicken is cooked through and the bacon is crisp.
- STEP 2
Remove the chicken from the oven and spoon over the BBQ sauce. Sprinkle over the cheeses, then return the chicken to the oven for 5 minutes until the cheeses have melted and start to bubble. Serve with mashed potatoes and steamed greens.
