Chargrilled chicken skewers and tzatziki recipe, wrapped in a warm flatbread is the best midweek meal for chicken. Ready in quickly in 20 minutes. Keep it healthy with salad on the side.

Ingredients

  • olive oil
  • lemon 1, juiced, 1/2 zested
  • oregano 1 tsp
  • garlic 2 cloves, crushed
  • chicken breasts 2, cut into chunks
  • fat-free Greek yoghurt 4 tbsp
  • cucumber ¼, seeded, peeled and grated
  • mint chopped to make 1 tbsp
  • flatbreads 2, warmed
  • iceberg lettuce shredded
  • red onion and tomato slices to serve

Method

  • Step 1

    Whisk 1 tbsp olive oil with the lemon zest, oregano, half the garlic and season. Coat the chicken in the marinade and then thread onto wooden skewers. Grill or fry for 4 minutes on each side until slightly charred and cooked through. To make the tzatziki, mix the yoghurt, lemon juice, remaining garlic, cucumber, mint and season. Spoon the tzatziki onto the breads, add the salad and top with the chicken.
