Honey-glazing your steamed carrots not only gives them a lovely sweet, buttery flavour but also makes them glisten – perfect for your Christmas lunch or any special occasion. You can also add herbs such as thyme with the butter.
Simmer the carrots in a large wide pan until just tender, about 15 minutes. Drain off all but a few tbsp of the cooking water then add the honey and butter and season well. Turn the carrots over the heat until glazed and golden.
