Winter Waldorf salad

This is the perfect winter salad as celery, apples and walnuts are all well in season now so you’ll get a lovely sweet crunchy result. Serve as a dinner-party starter or if you want to upgrade it to a more substantial meal, add some cooked, shredded chicken.

Ingredients

  • 2 red skinned apples, such as Cox’s or Braeburn
  • ½ lemon, juiced
  • 4 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 2 stalks celery, cut into chunks
  • a handful walnuts
  • a couple of handfuls watercress

Method

  • STEP 1

    Cut the apple into chunks and toss with the lemon juice. Mix together the mayonnaise and mustard and toss with all the other ingredients.
