Prawn Noodle Soup With Miso and Mushrooms

Prawn and mushroom miso soup

This super quick and easy prawn and mushroom miso soup means you can have a healthy but comforting meal on the table in just 15 minutes - perfect for a midweek supper.



  • miso soup paste 2 tbsp
  • shiitake mushrooms 4, sliced
  • pak choy 50g, leaves separated
  • cooked peeled prawns 50g
  • soba noodles 30g, soaked in boiling water for 2 minutes and drained
  • soy sauce 1 tsp
  • coriander chopped to make 1 tbsp (optional)
  • red chilli ½, sliced (optional)


  • Step 1

    Mix the miso paste with 500ml boiling water and bring to a simmer. Add the mushrooms and greens, and simmer for 4 minutes until softened. Add the prawns to warm through for a minute, then remove from the heat. Add the noodles, season with soy, then scatter with the coriander and chilli to serve, if you like.
