
Prawn and mushroom miso soup

Ingredients
- 2 tbsp miso soup paste
- 4 shiitake mushrooms, sliced
- 50g pak choy, leaves separated
- 50g cooked peeled prawns
- 30g soba noodles, soaked in boiling water for 2 minutes and drained
- 1 tsp soy sauce
- chopped to make 1 tbsp (optional) coriander
- ½ red chilli, sliced (optional)
Method
- STEP 1
Mix the miso paste with 500ml boiling water and bring to a simmer. Add the mushrooms and greens, and simmer for 4 minutes until softened. Add the prawns to warm through for a minute, then remove from the heat. Add the noodles, season with soy, then scatter with the coriander and chilli to serve, if you like.
