  • 2 tbsp miso soup paste
  • 4 shiitake mushrooms
    sliced
  • 50g pak choy
    leaves separated
  • 50g cooked peeled prawns
  • 30g soba noodles
    soaked in boiling water for 2 minutes and drained
  • 1 tsp soy sauce
  • chopped to make 1 tbsp (optional) coriander
  • ½ red chilli
    sliced (optional)

Method

  • step 1

    Mix the miso paste with 500ml boiling water and bring to a simmer. Add the mushrooms and greens, and simmer for 4 minutes until softened. Add the prawns to warm through for a minute, then remove from the heat. Add the noodles, season with soy, then scatter with the coriander and chilli to serve, if you like.
