Ingredients

  • 1 small cooked skinless chicken breast, shredded
  • 1 carrot, peeled and shredded
  • a small handful green beans, trimmed and sliced
  • ¼ small white or red cabbage, finely shredded
  • 1 shallot, finely sliced
  • a handful watercress
  • 2 tbsp cashew nuts, toasted
  • 1 tsp sesame seeds, toasted
  • 1 tsp
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • chopped to make 1 tbsp chives
  • 1 tsp rice wine vinegar

Method

  • STEP 1

    Mix the dressing ingredients together with some seasoning, and loosen with 1 tsp water. Toss the chicken, carrot, green beans, cabbage, shallot and the dressing in a bowl. Just before serving add the watercress, roughly chop the cashews and add to the bowl. Sprinkle with sesame seeds to serve.
