Cajun fried rice

This recipe for cajun fried rice is quick, easy and under 500 calories - perfect for a midweek meal

Ingredients

  • oil for frying
  • onion 1 small, chopped
  • green pepper 1 small, diced
  • garlic 1 clove, crushed 
  • smoked sausage (such as kabanos) 100g, chopped
  • dried thyme ½ tsp
  • dried oregano ½ tsp
  • paprika ¼ tsp
  • chilli flakes a pinch 
  • cooked basmati rice 250g pack

Method

  • Step 1

    Heat 1 tbsp oil in a frying pan. Cook the onion and pepper for 5 minutes until soft. Add the garlic and smoked sausage and cook for a couple of minutes. Stir in the herbs and spices. Add the cooked rice and toss until everything is piping hot.
