Ingredients
- bagels 2, split (use multi-grain for a low Gi)
- eggs 4
- smoked trout 50g slices
- butter 25g
- chives a few, snipped
Method

Step 1
Toast the bagel halves. Melt the butter in a pan, then add the eggs and heat slowly, stirring until softly scrambled and creamy.

Step 2
Put 2 bagel halves onto each plate, drape over the smoked trout then pile up the scrambled egg. Scatter over the chives and serve.
