Ingredients
- 2 bagels, split (use multi-grain for a low Gi)
- 4 eggs
- 50g slices smoked trout
- 25g butter
- a few chives, snipped
Method
- STEP 1
Toast the bagel halves. Melt the butter in a pan, then add the eggs and heat slowly, stirring until softly scrambled and creamy.
- STEP 2
Put 2 bagel halves onto each plate, drape over the smoked trout then pile up the scrambled egg. Scatter over the chives and serve.
