Ingredients

  • 2 tbsp crème fraîche
  • 1 tbsp mayonnaise
  • 1/2 lemon, zested
  • 1 tbsp capers, drained well and chopped
  • chopped to make 1 tbsp cornichons
  • roughly chopped to make 2 tsp dill
  • 1 small ridge cucumber, sliced diagonally to make ovals
  • 1 fillet hot smoked salmon, broken into flakes

Method

  • STEP 1

    Mix the crème fraîche, mayo, lemon zest, capers, cornichons, half the dill and season. Spoon onto the cucumber disks, add a piece of the smoked salmon and scatter over a little dill to serve.
