Black Rice Salad Recipe

Asian black rice salad

Black rice has a higher nutritional value than white rice and the same amount of fibre as brown. Try it in our Asian prawn black rice salad

Ingredients

  • black rice 150g
  • orange
  • prawns 150g, cooked and peeled
  • celery 1 stick, sliced
  • spring onions 3, sliced 
  • sesame oil 1 tsp 
  • edamame 80g 
  • black sesame seeds 1 tsp  

Method

  • Step 1

    Put the rice in a pan with plenty of boiling water, then cover and simmer for 35-40 minutes, until tender. Strain, and leave to cool for a few minutes. Peel the orange and cut out the segments. Tip into a bowl and squeeze in any remaining juice, then add the prawns, celery, spring onions, sesame oil and edamame. Season and toss with the cooked rice, then tip onto plates, and scatter with the sesame seeds to serve.
