Ingredients
- 3 eggs, beaten
- 4 slices white bread (bloomer or cob work well)
- 25g unsalted butter
- bacon, grilled tomatoes and mushrooms, to serve
Method
- STEP 1
Whisk the eggs with a fork in a shallow bowl with some salt and pepper. Add the bread slices one at a time, submerging them in the eggs on both sides so they soak up some of the mixture.
- STEP 2
Heat half the butter in a non-stick frying pan until foaming. Swirl the butter around the base to coat the pan, then add two pieces of bread at a time. Cook for 1-2 minutes or until golden brown and crisp. Flip the slices and cook for another 1-2 minutes on the other side. Keep the bread warm while you repeat with the remaining butter and eggy bread slices. Serve with bacon, grilled tomatoes and mushrooms.
