BBQ portobello burgers

The meat eaters will be jealous of these mouth-watering veggie burgers. Portobello mushrooms are smothered in mustard and barbecued to perfection.

  • Dijon mustard 2 tbsp
  • balsamic vinegar 1 tbsp
  • portobello mushrooms 2
  • beefsteak tomatoes 1
  • ciabatta rolls 2
  • red onion 1
  • rocket 2 handfuls


  • Step 1

    Mix 2 tbsp dijon mustard with 1 tbsp balsamic vinegar. Brush half the mixture over 2 large portobello mushrooms and season well.

    Barbecue for 2-3 minutes each side. Put 2 thick slices beefsteak tomatoes on top and barbecue for a further minute.

  • Step 2

    Spread the remaining mustard sauce over 2 sliced and toasted ciabatta rolls then add the tomato and mushroom, some sliced red onion and a handful rocket to each.
