
BBQ portobello burgers

The meat eaters will be jealous of these mouth-watering veggie burgers. Portobello mushrooms are smothered in mustard and barbecued to perfection.

- 2 tbsp Dijon mustard
- 1 tbsp balsamic vinegar
- 2 portobello mushrooms
- 1 beefsteak tomatoes
- 2 ciabatta rolls
- 1 red onion
- 2 handfuls rocket
Method
step 1
Mix 2 tbsp dijon mustard with 1 tbsp balsamic vinegar. Brush half the mixture over 2 large portobello mushrooms and season well.
Barbecue for 2-3 minutes each side. Put 2 thick slices beefsteak tomatoes on top and barbecue for a further minute.step 2
Spread the remaining mustard sauce over 2 sliced and toasted ciabatta rolls then add the tomato and mushroom, some sliced red onion and a handful rocket to each.
