Cook's tips to make the perfect gildas

  • Gildas traditionally use salted anchovies but we’ve used marinated ones for a sharper flavour. By all means used salted anchovies if you prefer.
  • You could double down on the anchovy by using olives stuffed with anchovies, if you like.

Effortless entertaining tip: Serve Martini Rosso or red vermouth with the anchovy skewers – this lushly fruity and spicy drink is delicious sipped neat over ice with a slice of citrus, or with two to three measures of prosecco and one measure of soda to make a spritz. Make it up in a jug if you want to pour several at once.


Gildas recipe

  • 9 guindilla peppers
  • 9 white marinated anchovy fillet
  • 9 fat olives
  • glass of chilled vermouth
    (garnish red vermouth with an orange slice, if you like)
  • bowl of smoked almonds
    to serve

Method

  • step 1

    Fold one of nine Guindilla peppers onto a wooden skewer, fold a white marinated anchovy fillet in the same way and thread it on top of the pepper, and finish with a fat olive.

  • step 2

    Repeat with another eight peppers, anchovies and olives.

  • step 3

    Arrange on a plate and serve with glasses of chilled vermouth (garnish red vermouth with an orange slice, if you like) and a bowl of smoked almonds.
