Raspberry gin

Make the most of raspberries as they come into season this summer by creating this easy, fruity infusion that's best enjoyed in the sun

  • 500g raspberries
  • 200g sugar
  • 70cl gin
  • (optional) sugar syrup


  • STEP 1

    Put the raspberries, sugar and gin in a clean mason jar. Mix, seal and store in a cool, dark place for a few weeks, tasting regularly and giving the jar a shake every other day. If you want a sweet liqueur, add sugar syrup to taste.

  • STEP 2

    Once you’re happy with the flavour, strain out the boozy raspberries – try swirling them into ice cream – and decant the gin into sterilised bottles.
