Ingredients
- 500g raspberries
- 200g sugar
- 70cl gin
- (optional) sugar syrup
Method
- STEP 1
Put the raspberries, sugar and gin in a clean mason jar. Mix, seal and store in a cool, dark place for a few weeks, tasting regularly and giving the jar a shake every other day. If you want a sweet liqueur, add sugar syrup to taste.
- STEP 2
Once you’re happy with the flavour, strain out the boozy raspberries – try swirling them into ice cream – and decant the gin into sterilised bottles.
