Gin and tonic granita

This boozy granita makes a great palate cleanser or summer dessert. It's quick, easy and super refreshing, the perfect way to finish a rich and heavy dinner

Ingredients

  • tonic water 250ml
  • gin 75ml
  • limes 2, 1 zested, both juiced

Method

  • Step 1

    Mix all of the ingredients with 50ml of water.

  • Step 2

    Pour into a metal tray and freeze overnight.

  • Step 3

    Remove from the freezer and scrape with a fork until you have a roughed-up texture.

  • Step 4

    Put back in the freezer for an hour then repeat.

  • Step 5

    Serve in small bowls.
