Summer berry fizz

Fruit and fizz makes for a fantastic summer entertaining cocktail. This is delicious if you make your own berry vodka but is still good if you buy ready-made.



  • raspberries 350g
  • strawberries 800g, trimmed and quartered
  • unwaxed lemon 1, zested
  • golden caster sugar 200g
  • vanilla pod 1, halved
  • vodka 70cl bottle
  • raspberries 150g
  • blueberries 150g
  • nectarines 2, cut into slivers
  • cava or soda water 1 bottle


  • Step 1

    Put the raspberries, strawberries, lemon zest and caster sugar in a bowl and crush with a potato masher. Add the vanilla pod, mix well and leave for 2 hours until the fruit starts to become really juicy.

  • Step 2

    Cover the fruit with the vodka, mix well, cover and chill for at least 3 days, or until needed.

  • Step 3

    Strain the vodka through a fine mesh sieve then decant into a clean bottle. Pour a measure of the vodka into a tall glass, add a few fresh raspberries, blueberries and the slices of nectarine. Top up with chilled cava or soda and ice to serve.
