Mascarpone Gnocchi Recipe with Spinach and Tomato

Tomato, spinach and mascarpone gnocchi

Grill this warming gnocchi until bubbling and golden for a quick midweek meal ready in 20 minutes

Ingredients

  • gnocchi 500g pack
  • tomato pasta sauce 350g tub (use any kind you like)
  • spinach 100g, chopped
  • mascarpone 125g
  • parmesan (or veggie alternative) 50g, grated

Method

  • Step 1

    Heat the grill to medium. Cook the gnocchi in a pan of boiling water following pack instructions, then drain. Meanwhile, heat the tomato sauce in a pan and add the spinach, stirring until wilted.

  • Step 2

    Add the gnocchi to the sauce, season and tip into a heatproof dish. Spoon blobs of mascarpone over. Scatter with the grated cheese and grill until bubbling and golden.
