  • 1 red pepper
    quartered
  • 1 yellow pepper
    quartered
  • ½ onion
    cut into 4 wedges
  • 2 cloves garlic
  • spray oil
  • 125g cherry tomatoes on the vine
  • 250g Merchant Gourmet Super Seed Mix
  • 1 tbsp sherry vinegar
  • a small bunch coriander
    torn
  • a handful rocket
  • 30g feta
    crumbled

Method

  • step 1

    Heat the oven to 220C/fan 200C/gas 7. Put the peppers, onion and garlic onto a baking tray, spray with oil and season. Roast for 20 minutes. Add the cherry tomatoes to the tray and roast for another 15-20 minutes or until the tomatoes and garlic have softened, and the peppers and onions are charred.

    Heat the grains following pack instructions, then toss through the veg and sherry vinegar, mixing well. Add the coriander and rocket, and mix again. Top with the feta, then divide between plates.
