Potato Salad Recipe with Gherkins and Capers

This is a lovely sharp potato salad with gherkins, shallots and baby capers giving a tang to the creamy dressing. Serve as a side at a big family dinner or at a buffet with smoked salmon or ham.



  • baby new potatoes 1kg, halved if large
  • mayonnaise 3 tbsp
  • soured cream 6 tbsp
  • shallots 2, finely chopped
  • gherkins or cornichons 6 tbsp, chopped
  • baby capers 3 tbsp
  • Dijon mustard 2 tsp


  • Step 1

    Boil the potatoes in salted water until tender. Mix the rest of the ingredients and season well.

  • Step 2

    Drain the potatoes and cool then toss with the dressing.
