This recipe for honey-roasted sweet potato with red onions is a great way to spice up your side dishes when entertaining. It's really easy to make but delivers big flavours.

Ingredients

  • sweet potatoes 750g, peeled and cut into 4-5cm cubes
  • red onions 2, peeled and cut into thick wedges
  • olive oil 5 tbsp
  • ground ginger 1 tsp
  • ground cumin 1 tsp
  • chilli flakes 2 tsp
  • orange 1/2, juiced
  • honey 1 tbsp
  • coriander leaves to serve, a handful, roughly chopped
  • black olives a few, to serve

Method

  • Step 1

    Heat the oven to 190C/fan 170C/gas 5. Put the sweet potatoes and onions in a single layer in a roasting tin. Whisk 5 tbsp olive oil with the ginger, cumin, chilli, orange juice and honey, then pour the mixture over the veg and toss to coat well. Season with salt and roast for 20 minutes, or until tender. Serve with a sprinkling of coriander and a few black olives.
