Garlic and chilli focaccia

A soft, pillowy focaccia bread makes a great easy vegetarian side dish. This one is flavoured with garlic and chilli but you could mix and match with other herbs such as thyme and rosemary. Serve just warm for best results.




  • chilli flakes 1 tsp
  • garlic 1 clove, chopped
  • flat-leaf parsley 15g, chopped
  • olive oil
  • focaccia 2


  • Step 1

    Heat the oven to 200c/fan 180c/gas 6. Mix the chilli flakes, garlic, parsley and 3 tbsp olive oil. Halve the focaccia lengthways and brush the sauce over. Season.

    Put both pieces on a baking sheet and bake for 8 minutes. Slice into pieces.
