BBQ corn with garlic and chilli butter

Spicy garlic butter gives a modern twist to this classic BBQ side dish of charred sweetcorn. Makes the best accompaniment to grilled meats or fish.

Ingredients

  • butter 125g, softened
  • garlic and chilli sauce 2-3 tbsp (available in supermarkets)
  • coriander 1 tbsp, chopped
  • corn on the cob 6

Method

  • Step 1

    Mash the butter and sauce together with the coriander. Form into a sausage and wrap in clingfilm. Chill rapidly in freezer.

  • Step 2

    BBQ the corn turning frequently for about 7-10 minutes. Serve with slices of the chilli butter on top.
