The fool’s gold sandwich

Legend goes that Elvis once chartered a plane from Memphis to Denver to eat one of these at the Colorado Mine Company restaurant. It's an American classic that sounds so wrong but tastes so right



  • butter 75g, at room temperature
  • white loaf 1 large soft, oval shaped
  • dry-cured streaky bacon 450g
  • smooth peanut butter 340g jar
  • blueberry jelly or jam 250g jar


  • Step 1

    Heat the oven to 190C/fan 170C/gas 5. Spread the butter all over the outside of the loaf in a thin layer. Put the loaf in the oven for 15 minutes to warm and crisp up the crust.

  • Step 2

    Grill the bacon until crisp and golden. Split the loaf lengthways and hollow a thin layer of bread from the top and bottom of the loaf. Spread the bottom with the peanut butter and the top half with the jelly/jam. Top the peanut butter side with the bacon. Sit the top half on and gently press down. Cut into slices.
