Ingredients

  • butter
  • 1 tbsp unrefined demerera sugar
  • 3 peeled apples, cored and cut into wedges
  • 3 tbsp calvados
  • 4 ready-made crêpes, buy from larger supermarkets
  • to serve extra-thick cream or vanilla ice cream
  • warmed to serve dulce de leche or other toffee sauce

Method

  • STEP 1

    Melt a knob of butter with the sugar in a frying pan. Add the apple wedges and cook until golden and tender. Add the calvados and either flambé or bubble away for 2-3 minutes.

  • STEP 2

    Warm the crêpes, divide the apple mix between them and fold in quarters. Serve 1 or 2 crêpes (depending on size) with a dollop of cream and a drizzle of toffee sauce.
